Can you please tell me the connection URL that you have for the  
dataset?  You might try something like the following:
jdbc:mysql://localhost:3306/specimen_collections? 
autoReconnect 
=true&useUnicode=true&characterEncoding=UTF8&characterSetResults=UTF8
